 BACHELOR PANEER BUTTER MASALA

INGREDIENTS

To Grind 
  • 1 large onion - roughly chopped
  • 3 tomatoes - roughly chopped
  • 1 green chilli
  • 4 garlic
  • 1 inch ginger
  • 3 cloves
  • 2 inch cinnamon stick
  • 2 cardamom pods
  • 10 cashews
For Masala
  • 3 tbsp unsalted butter
  • 1 bay leaf
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp sugar
  • salt - to taste
  • 3/4 tsp kasoori methi
  • 1/4 cup milk
  • 2 tbsp fresh cream - for garnish - optional
  • 1 tbsp coriander leaves - garnish
METHOD
  • in the blender, add roughly chopped onion, tomatoes, garlic, ginger, green chilli, cloves, cinnamon stick, cardamom pods and cashews
  • grind to a smooth paste without adding water and set aside
  • heat unsalted butter in the pressure cooker pan and add bay leaf, ground onion tomato paste, red chilli powder, garam masala powder, sugar, salt, kasoori methi, paneer cubes, milk and little water
  • mix well
  • close with lid and pressure cook for 3 whistles on medium flame  and then switch off the flame
  • once the pressure releases naturally open the cooker and mix the paneer butter masala well
  • transfer the masala into the serving bowl and garnish with fresh cream (if you add) and a tbsp of chopped coriander leaves
  • serve hot with chapathi, roti or naan
  • Enjoy!
NOTES
  • you can also add ginger garlic paste instead of garlic and ginger
  • adjust spice level according to your taste
  • if you don't like, replace butter with oil
