TOMATO POHA UPMA RECIPE | JAYASHREE RECIPES
Tomato poha Upma is a quick, healthy and delicious breakfast option made with flattened rice. This is one of the easiest and tasty breakfast in the busy morning hours. It goes well with coconut chutney and tomato chutney or you can have it with a cup of tea or coffee. This upma takes just 30 minutes to prepare. Add your favorite veggies to make more healthy. For this upma, use thick variety poha for better results, if you use thin variety, the upma will turn very mushy. RECIPE FOR TOMATO POHA UPMA

INGREDIENTS
- 1.5 cup poha - thick variety
- 3/4 cup water
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1/2 tsp cumin seeds
- 1 spring curry leaves
- 1 green chilli - chopped
- 1 inch ginger - chopped
- 1 onion - finely chopped
- 1 tsp ginger garlic paste
- 2 tomato - chopped
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/4 cup carrot - grated
- 1/4 cup peas
- salt to taste
- 2 tbsp coriander leaves - optional
- wash and soak poha in water for 15 minutes (add water just to immerse in the poha)
- after 15 minutes drain the excess water from the poha using strainer and set aside
- heat oil in the pan
- temper with mustard seeds, urad dal, cumin seeds, curry leaves, green chilli and chopped ginger
- saute for few seconds
- add chopped onion and saute well for 2 minutes or until the onion turns transparent
- add ginger garlic paste and saute well until the raw smell goes
- add chopped tomato, turmeric powder, red chilli powder, coriander powder, cumin powder and salt
- mix well and cook the tomatoes until mushy
- now add chopped carrot and peas
- mix well with the masalas and saute for 2 minutes
- add 1/4 cup water and mix well
- cover and cook the veggies for 5 minutes
- drain the excess water from the poha and add into the pan
- mix well with masala mixture
- cover and cook the poha upma for 3 minutes in low flame and then switch off the flame
- garnish with coriander leaves
- keep covered until serving
- this is an excellent healthy morning breakfast

- do not add more water for soaking the poha, or else it will turn soggy
- use thick variety poha for better results, if you use medium or thin variety, the upma will turn mushy
- use indian tomato, for bright red color and tangy taste
