Fox nuts (makhana) is a great snack option. It's an ideal substitute for popcorn to keep the hunger pangs away. In some parts of India, it is considered auspicious and is offered to gods on special occasions and festivals.  Makhana are actually tasteless. For spicy roasted makhana, roast the seeds with a little ghee on a low flame, sprinkle turmeric powder, red chilli powder, chaat masala and salt, yummy snack is good to go. RECIPE FOR SPICY ROASTED PHOOL MAKHANA

INGREDIENTS

  • 2 tsp ghee
  • 1.5 cup makhana / foxnuts / lotus seed
  • 1 tsp ghee
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp chat masala powder
  • pinch of salt

METHOD

  • heat ghee in a pan, add 1 cup of makhana and roast them on very low flame for 5 minutes or until they are crisp (it should break easily if you press between your fingers and hears a crunchy sound)
  • remove the roasted makhana from the flame and set aside
  • again heat ghee in the same pan, add turmeric powder, red chilli powder, chaat masala powder and salt
  • mix well and saute for 1 minute in very low flame (do not burn the spices)
  • now add roasted makhana and toss well
  • cook in very low flame for another 2 minutes and then switch off the flame (make sure the spices are well coated with the roasted makhana)
  • cool down completely and then store in an air tight container
  • serve with a cup of tea or coffee
  • Enjoy
NOTES

  • adjust spice level according to your taste
  • cook the whole process in very low flame
  • if you are vegan, replace ghee with coconut oil and cook
