Chocolate Crinkle Cookies are like a cross between gooey Fudgy Brownies and crisp chocolate  cookies. They are rolled in powdered sugar before baking so they form "crinkles" as they expand in the oven. The outer layer of cookies just gets crunchier, while the center stays so gooey. It stays good in the cookie jar for several days. This is one of the easiest cookie  recipe which is very delightful, addictive and perfect for festive season. RECIPE FOR CHOCOLATE CRINKLE COOKIES

INGREDIENTS

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

METHOD

  • in a mixing bowl, add granulated sugar, unsweetened cocoa powder, vegetable oil, vanilla extract and eggs
  • whisk well until the mixture is smooth
  • in another mixing bowl, add all purpose flour, baking powder and salt
  • mix well
  • add the flour mixture in to the cocoa mixture 
  • mix well until just combines
  • cover the bowl with plastic wrap and refrigerate for atleast 4 hours or else for overnight
  • in a baking tray, spread the parchment paper, scoop out the dough and roll into even sized balls (use wet hands) and then roll each ball in the powdered sugar
  • place the prepared balls on a parchment paper, make sure to leave space between each of the cookies
  • pre heat the oven to 350 degree F and bake for 10-12 minutes
  • cookies will come out soft but it will harden as they cool down
  • allow to cool on the cookie sheet for 5 minutes before transferring to wire racks to cool

NOTES
  • This recipe can be doubled for more cookies, with the same baking time
