Appam also called as palappam or plain appam or lace hopper. It is a very popular and traditional breakfast recipe of kerala. This is not the typical kerala appam recipe but this is Tamil Nadu style of making appams. 

Appams are soft and spongy in the center and has a thin and crispy texture on the outside. This is a very good and healthy breakfast option, usually appam is made in every south Indian house holds. INGREDIENTS

  • 1 cup raw rice
  • 1 cup boiled rice
  • 3 spoon urad dal
  • 1 spoon fenugreek seeds
  • 1/2 cup cooked rice
  • salt to taste

  • water -  to grind

METHOD

  • wash and soak the raw rice, boiled rice, urad dal and fenugreek seeds together in enough water for 6-7 hours
  • drain the water and add it into the blender
  • grind to a smooth paste
  • now add cooked rice and grind to a soft and smooth batter
  • transfer the batter into the bowl
  • add salt and mix well
  • allow the batter to ferment for 8-10 hours or overnight, fermentation is very important step in making appam
  • the batter will rise and increase in volume the next day
  • once the batter is fermented, take required amount of batter into the other bowl
  • add required amount of water and mix well
  • batter should be free flowing consistency, not too thick, nor too thin
  • heat appam pan and pour a ladle full of batter and swirl the pan gently and spread the batter all around the sides
  • cover and cook on medium flame
  • once the edges starts to change color to light brown, remove the appam from the pan
  • serve hot with coconut milk or kadala curry or veggie stew
  • taste delicious 
NOTES
  • ferment the batter well or else the appam will not be soft and flaky
  • appam will taste better if prepared in cast iron appam wok
  • once the pan is hot, then pour the batter or else you will get perfect shape
  • this appam is made with no soda and no yeast
