Thinai adai recipe is a South Indian delicacy which is a very good breakfast option for everyone. It is made with foxtail millet, lentils, red chillies, shallots, green chillies and coriander leaves. It goes well with aviyal, jaggery, coconut chutney, tomato chutney, etc., Adai is quite filling if you have 2 at once. The texture of this adai is little thicker than a basic dosa. RECIPE FOR THINAI ADAI

INGREDIENTS

  • 1 cup foxtail millet
  • 1/2 cup toor dal
  • 1/2 cup bengal gram dal
  • 1 tbsp urad dal
  • 6 red chillies
  • salt to taste
  • 1 cup onions - finely chopped
  • 3 green chili - chopped
  • 1/4 cup coriander leaves - chopped
  • 1 tsp sesame oil - to make adai
METHOD
  • rinse and soak foxtail millet, toor dal, bengal gram dal and Urad Dal together for 5 hours
  • soak red chillies in water
  • after 5 hours, add soaked red chillies along with water into the blender
  • pulse for few seconds
  • now add soaked millets and lentils
  • add little water and grind to a slight coarse paste
  • consistency of the batter should neither be too thick nor too thin
  • transfer the batter into the bowl
  • add salt and mix well
  • allow the batter to ferment for 2-3 hours
  • once the batter is fermented, mix the batter well
  • add chopped onions, green chillies and coriander leaves
  • mix well
  • heat a cast iron pan, pour a ladle full of batter and spread in a circular motion
  • drizzle a tsp of oil around the adai and cook for 2-3 minutes
  • once the edges turns light brown color, flip over to other side and cook evenly
  • remove from the pan and serve hot with coconut chutney or tomato chutney
NOTES - we can also add finely chopped coconut, curry leaves and ginger to the adai batter to make it more delicious.
