PINEAPPLE SHEERA RECIPE | PINEAPPLE KESARI | JAYASHREE RECIPES
Sheera is an Indian dessert similar to pudding. It is usually prepared with shoji, ghee and sugar. It is a very simple dessert but delicious in taste. Pineapple sheer is very popular dessert in South India in the name of Pineapple Kesari, usually made on auspicious occasions and festivals. This mouth watering dessert is cooked with pineapple, sooji, water, saffron, ghee, cashews and cardamom powder. This recipe is easy to prepare and made under 30 minutes. RECIPE FOR PINEAPPLE SHEERA

INGREDIENTS
- 1/4 cup ghee - splitted
- 1/2 cup rava or sooji
- 3 tbsp cashews
- 1.5 tbsp raisins
- 1 cup pineapple chunks - cut into small pieces
- 2 cup water
- 1/2 cup sugar
- 1/8 tsp saffron
- 1/8 tsp green cardamom powder
- heat a tsp of ghee in a pan
- add rava or sooji
- fry on low medium flame until it turns aromatic
- transfer the roasted rava onto a plate and keep aside
- heat a tbsp of ghee in the same pan
- add cashews and fry on low medium flame until they turn golden brown
- now add raisins and fry until they turn puff up
- transfer the roasted cashews and raisins to a plate and keep aside
- heat a tsp of ghee in the same pan
- add pineapple chunks and saute for 3 minutes
- add water, sugar and saffron
- mix well
- cover and boil for 3-4 minutes or until the pineapple softens
- once the water starts to boil, add roasted rava and stir continuously without forming any lumps
- cover and cook on low medium flame
- once the rava is absorbed all the water, add remaining ghee and cardamom powder
- mix well and cook for another 1-2 minute or until the ghee starts to release from the kesari
- switch off the flame and then add roasted cashews and raisins
- mix well
- serve pineapple sheera hot or warm
- if you do not prefer pineapple chunks, then you can add pineapple puree
- if you don't have saffron, add a pinch of yellow food color
- roast the rava well in ghee or else there is a chances of getting lumps while making kesari
