BANANA CHOCOLATE CHIP MUFFIN | JAYASHREE RECIPES

RECIPE FOR BANANA MUFFINS

INGREDIENTS
- 3 bananas very ripe, roughly mashed with a fork
- 2 egg at room temperature, slightly beaten
- 1/2 cup unsalted butter, room temperature
- 2/3 cup granulated sugar
- 1 tsp vanilla extract
- 1.5 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semisweet chocolate chip
- 1 tbsp semi sweet chocolate chip - for decor
PROCEDURE
- take 3 ripe bananas, roughly mash with a fork and keep it aside
- take 2 egg in a small bowl, slightly beat with a fork and set aside
- preheat oven to 350 degree F and line a muffin tin with liners
- in a mixing bowl, add unsalted butter and granulated sugar
- beat well using hand beater or hand whisker
- add slightly beaten eggs and beat well for 30 seconds
- add mashed bananas and vanilla extract
- mix well until just combined
- now add the dry ingredients, all purpose flour, baking soda and salt
- mix well until all incorporated
- add semi sweet chocolate chip
- fold well into the batter
- divide batter evenly into muffin tin with the help of ice cream scoop
- sprinkle some chocolate chip over the top
- bake for 25 minutes on the center rack or until the top is golden and a toothpick inserted into the center comes out clean
- allow the muffins to cool at room temperature on wire rack
- serve for breakfast or for evening snack

NOTE
- overripe bananas are the secret ingredient for these moist and delicious banana muffins
- you can replace chocolate chips with some toasted walnuts or pecans or raisins
