Avarakkai Kootu Recipe | Broad Beans Stew | Jayashree Recipes
Avarakkai kootu is a simple south Indian recipe made with toor dal, moong dal, broad beans and grated coconut. Broad beans is also known as "Avarakkai" in Tamil. RECIPE FOR AVARAKKAI KOOTU

INGREDIENTS
- 2 cup broad beans / Avarakkai
- 2 tbsp toor dal
- 1 tbsp moong dal
- 1/4 tsp turmeric powder
- 1.5 tsp sambar powder
- salt to taste
- 1 cup water
- 1/4 cup grated coconut
- 1 tsp cumin seeds
- 1 tbsp roasted gram dal (pottukadalai)
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- 1 spring curry leaves
- 1 tbsp coriander leaves - for garnish (optional)
PROCEDURE
- take broad beans in the chopping board
- cut both the ends and remove the string from the sides of the beans and then clean in fresh water
- cut the broad beans in to thin strips
- soak toor dal and moong dal in water for 10 minutes
- in the mixer grinder add grated coconut, roasted gram dal and cumin seeds
- grind to a smooth paste with little water
- in the pressure cooker pan, add soaked dal, chopped broad beans, turmeric powder, sambar powder and salt
- add 1 cup water and mix well
- pressure cook for 4 whistle and then switch off the flame
- once the pressure subsides down naturally, open the cooker, add ground coconut paste and mix well
- cook on low medium heat until the kootu thickens slightly
- in the meanwhile, heat a tsp of oil, add mustard seeds and allow it to splutter
- add Urad Dal and allow it to change the color and then add curry leaves
- pour the seasoning over the kootu and mix well
- the consistency of the kootu should neither be too thick or too thin, should be medium consistency
- broad beans kootu ready to serve
- enjoy avarakkai kootu with hot steamed rice with pickle or papad or you can enjoy with Chapathi
- taste delicious 😋
- replace sambar powder with red chili powder or else you can add 2 green chilli and grind along with coconut and cumin seed
- clean the broad beans after removing the strings from the beans
