RECIPE FOR ALOO PALAK PARATHA

INGREDIENTS

  • 2 potato - boiled
  • 1 cup spinach (palak)
  • 2 cup water
  • 1.5 cup whole wheat flour
  • 1/8 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • salt to taste
  • 1 tbsp curd / yogurt
  • 1 tsp garlic - crushed
  • water to knead the dough
  • little flour for dusting
  • 1 tsp oil for frying each paratha 

PROCEDURE

  • take 2 boiled potatoes, peel the skin and mash well
  • boil enough water in  sauce pot, add spinach leaves
  • cook for 30 seconds and switch off the flame
  • drain the water and cool the spinach
  • transfer into mixer grinder and grind to a smooth paste
  • take wheat flour in a bowl
  • add turmeric powder, red chilli powder, coriander powder, cumin powder, salt, curd and crushed garlic
  • mix well
  • add mashed potatoes and spinach puree
  • mix well
  • add enough water and knead like a dough
  • knead well till you get smooth and soft dough
  • cover with kitchen towel to keep the dough from drying
  • rest the dough for 15 minutes in room temperature
  • after 15 minutes, knead the dough well
  • pinch a medium sized ball from dough
  • add some dry flour
  • roll it into a thin circle like chapatti or paratha
  • heat a dosa/chapathi pan
  • place the rolled paratha in to the hot pan
  • cook two sides of paratha, (each side 10 seconds)
  • add a tsp of oil and spread evenly
  • flip over to other side and cook properly
  • make all paratha this way
  • serve paratha with any paneer curry or raitha or pickle
  • taste delicious 😋 

NOTE

  1. adjust salt and spices according to your taste
  2. instead of spinach puree, you can also use finely chopped spinach for making aloo palak paratha
